About the Recipe
A great make ahead dish to please a crowd. Warm yourself up from the inside with this meaty, spicy dish.
Imagine coming in from watching the fireworks hungry and cold to the smell of the spices. Making it in advance only improves the flavour.
I have written this recipe for a family of 4, but this can easily doubled or tripled up to serve a party of people.
I like this recipe with twice baked potatoes, but just a hot baked potato works just as well, or fluffy rice.
Why not make a vegan version by swapping out the meat for lentils.
The 'fire' colour peppers make it look really colourful, (like a fire) but you can always use just red peppers or green.

Ingredients
1 tbsp of olive oil - 1 tsp for the sweet potato fries and the remainder for the burgers
300g sweet potatoes
2 tsp of smoked paprika - 1 tsp for the sweet potato fries and 1 tsp for the burgers
1 400g tin of black beans
1 onion, chopped finely
1 garlic clove, grated
100g of bread crumbs
1 egg
50g of feta cheese

Steps
Preheat the oven to 180°C/160°C fan/350°F/gas mark 4.
For the sweet potato fries, simply cut them into wedges, add salt, pepper and smoked paprika with a teaspoon of olive oil and bake in the oven for 40 minutes.
Drain the black beans thoroughly and place on another baking tray with parchment paper. Put in the oven for about 10-15 minutes - enough to dry them out. This will help give you the meaty texture rather than a sloppy bean burger.
Meanwhile, sautée the onions until soft in a pan with a little olive oil and garlic.
Put the dried beans, sautéed onions and garlic together with the breadcrumbs, smoked paprika and feta cheese, using a folk mash it all together. Add the egg to bind and shape into burger patties.
Fry the burgers on a medium to high heat for about 5 minutes on each side, until cooked through or oven bake along side the sweet potato fries.
