Forget your take away riddled with thousands of empty calories. This easy but comforting dish makes a perfect end of the week treat, with a splash of cream and salty chorizo, it feels special without breaking the calorie bank.
Serve with a green salad on the side, especially if you like your portions big.

Ingredients
300g dried linguine pasta
• 50g chorizo
• 1 onion
• 2 garlic cloves
• 1 tin of tomatoes
• 100ml cream
• 50g frozen peas
• 80g spinach
• 50g Parmesan
• 25ml vodka
• Smoked paprika
• Salt and pepper
• 500g boneless chicken thighs
Preparation
Steps
Cut the chorizo into small chunks and slice the onions into small squares. Fry the chorizo in olive oil for 2-3 minutes, then add the onions and continue frying for 5 minutes until the onions become translucent.
Meanwhile, cut the chicken into small bite-sized pieces and add them to the pan. Fry for 5 minutes, stirring the chicken with the chorizo and onion mixture. Then, add some minced garlic and smoked paprika. Stir and continue cooking for a few more minutes.
Once the chicken is browned, pour in the vodka, stir, and season with salt and pepper. Add the can of tomatoes, stir, reduce the heat, and let it simmer.
Cook the pasta in a pan of salted, boiling water. Bring to a boil, then simmer for 10 minutes or until the pasta is cooked.
Add the spinach and frozen peas to the tomato mixture and cook for 5 minutes. Just before the cooking time is up, pour the cream into the sauce, drain the pasta, and add it to the sauce.
Serve on plates and sprinkle with Parmesan.
