About the Recipe

Ingredients
3.5kg Beef brisket
•2 large onions
•2 large yellow pepper
•2 large red pepper
•2 TbspsCumin
• Tbsp paprika
•Chipotle powder
•2 tbsp garlic powder
•2 tbsp onion powder
•1 fresh jalapeño pepper
•2 tins of tomatoes
•600ml of beef Stock
•8 cloves of garlic
•Salt and pepper
For the guacamole
4 large avocado
1 red onion
2 cloves garlic
handful of fresh coriander
fresh squeezed lime juice
2 chopped fresh tomatoes (optional)
Preparation
Steps
Mix up all the spices into a bowl and smother the beef brisket on all sides, along with some salt and pepper.
In a hot pan, sear the beef brisket on all sides with some olive oil, and set aside in a large roasting tray.
Add more olive oil to the pan. Add the sliced onions, chopped jalapeño peppers and minced garlic. After 5 minutes, add the stock, tomatoes, and more salt and pepper to taste.
Once warmed through, pour over the beef brisket, cover with foil, and put into the oven on low for 8 hours.
If the beef seems dry, add a little more stock or water. It should be juicy but not swimming in juices when served. Near the end of the cooking time, fry up all the peppers until soft and add to the roasting tray with the beef brisket.
Once cooked, leave to rest under foil until ready to serve. Pull apart with forks and mix the peppers and juices in.
For the guacamole; peel the skin from the avocados and take out the stone mash them up in a bowl using a folk. Add the finely chopped red onions, minced garlic, finely chopped coriander, fresh squeezed lime, salt, pepper and finely chopped tomatoes and mix well.
Serve with the beef brisket, alongside any other sides.
