About the Recipe

Baked beans are a classic that you can eat on their own as a main dish or as an accompaniment to a healthy fry up or beans on toast. Eating beans is a great source of natural fibre, so is a great option for a healthy lunch too.

Making the baked beans means you can alter the flavour to suit but they taste even better with fresh herbs and smokey paprika. And if you like spice you can alter the chilli to suit. If you want to bulk out the recipe you can also add chopped courgettes, spinach and peppers. Cook these in after the onions in step 1, until softened. You can also swap the beans to any other such as Butter beans, Cannellini beans or Pinto beans.

You can add small chopped cougetttes, spinach or peppers if you want to bulk it out and add more nutrients. Cook these in after the onions until softened.

Ingredients

  • 1 tsp of olive oil

  • 1 large onion or 2 small onions, sliced

  • 2 cloves garlic, grated

  • Flavourings such as;

    • 1 tsp of Italian herbs,

    • 1 tsp of smoked paprika

    • 1/4 tsp of chilli - or more if you like heat

  • 400g of tinned plum tomatoes

  • Pinch of salt and black pepper

  • 500g of cooked haricot beans. Alternatively you can use butter beans, cannellini beans or pinto beans. Either soak according to instructions, or use pre-cooked tinned beans

  1. Fry the onions in some olive oil until brown, this should take around 5-10 minutes, stirring occasionally.

  2. Add the garlic, Italian herbs, smoked paprika, chilli and  tomatoes, then simmer for 20 minutes on a medium to low heat, breaking the tomato’s with a spatula.

  3. Add the beans and stir. 

  4. If the mixture looks too dry, add some water and season well.

  5. Continue to simmer for 10 minutes until you are left with a thick consistency.
