About the Recipe

Eggs, avocado, salmon and tomatoes all ready to go for the following morning.

If you are training your muscles hard in the gym, then you'll be well aware of the importance of hitting your protein goals to aid muscle recovery. This make in advance protein kick will make an ideal breakfast to hit your goals and keep you full until lunch.

Of course you can eat it straight away if you like, or serve on top of some sour dough to make it an indulgent Sunday brunch. I often skip an early morning meal (breakfast) and have something like this a bit later on, so is a perfect meal for late morning if you like to fast too.

Ingredients

  • 4 eggs

150g smoked salmon

1 avocado

200g of cherry tomatoes

1 lime

teaspoon of olive oil

Preparation

Steps

  1. Put the eggs into a pan of boiling water and boil for around 8-10 minutes.

  2. Cut the avocado into two, take out the stone and score the flesh so it makes squares and mash, squeeze with half the lime and season with a bit of salt and pepper.

  3. Chop up the tomatoes into halfs, season and add a little bit of olive oil and the rest of the lime.

  4. In two lunch boxes, divide the avocado between the two and the tomatoes and salmon.

  5. When the eggs are done drain and put into some cool water. Once cooled peel and put two in each lunch box, put in the fridge ready for the morning
