About the Recipe
I create this Mexican Egg recipe by sautéing onions and peppers, then adding fresh eggs and diced tomatoes. Seasoned with a custom blend of chili powder, cumin, and other spices. A hearty and flavourful breakfast.
A great breakfast option on its own, or with a leafy salad and some homemade salsa for a light lunch.

Ingredients
1 tbsp olive oil
1 onion sliced
1 red pepper
1 green pepper
1 tsp cumin
1 tsp paprika
1/2 tsp chilli
2 cloves garlic, grated
1 tin of tomato 400g
Salt and pepper
4 eggs
4 wholemeal tortillas
OPTIONAL EXTRAS
Fresh coriander
50g cheddar cheese - add 50 calories to the calorie count if using cheese
Preparation
Steps
Add olive oil to a hot pan, along with the sliced onions and cook for 8 minutes. When soft add the peppers and cook for another 8 minutes.
Add the spices including the garlic and cook for a couple of minutes. Add the tomatoes with the seasoning. Leave to simmer with the lid on for about 20 minutes, it’s important to develop the sauce for better flavour.
Once cooked, make little Wells in the tomato sauce and crack in the eggs. Cover and cook for about 5 minutes, or until the eggs turn white. You want the eggs to be runny in the middle. If you don’t like your eggs runny, cook for longer.
Put the tortillas on the microwave to warm up for 30secs. Take the pan off the heat and spoon out the eggs one by one along with some of the sauce, placing into the centre of the tortillas. You can sprinkle with some grated cheese and coriander.
