About the Recipe

Experience the delightful blend of sweet and spice in our Overnight Carrot Cake Oats. The soft, chewy oats are infused with the rich flavours of grated carrots, aromatic cinnamon, and a hint of ginger. A truly indulgent and nourishing breakfast.

You can swap the milk and yogurt for plant based options if you want a vegan alternative.

Ingredients

  • 100g porridge oats

  • 1/2 cup finely grated carrot

  • 1 tsp ground cinnamon

  • 1/4 tsp ground allspice

  • 1 tbsp chia seeds

  • 2 tbsp raisins

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup

  • 300ml of cows milk orĀ  alternative plant based milk such as almond or cashew

  • 1/4 cup 2% Greek yogurt, optional

  • 2 tbsp walnuts/pecans

  1. Combine dry ingredients in medium container with a cover.

  2. Add the wet ingredients and mix again.

  3. Cover and transfer the container to the refrigerator. Let sit for at least 2 hours or overnight.

  4. Top with Greek yogurt (optional) and walnuts or pecans.
