About the Recipe

This dish is one of my favourites. The peppers are great on their own, or I often have them as part of a roast dinner in replace of potatoes. Any leftovers make a great lunch option!

You can swap the vegetables out for others like courgettes instead of mushrooms, for example.
Use as much chilli to your preferred heat level.

For a vegetarian alternative, leave out the meat.

For a vegan alternative, leave out the meat and cheese.

Serve with sweet potato wedges, or a large salad or both.

Ingredients

  • 400g turkey mince

  • 1 tbsp of olive oil

  • I large onion, diced

  • 4 carrots, diced

  • 250g of mushrooms

  • 3 cloves of garlic, minced

  • 4 large peppers

  • 1 tsp cumin

  • 1 tsp paprika

  • 1/4 tsp chilli powder

  • Salt and pepper to taste

  • tinned tomatoes 

  • Feta cheese

Steps


  1. Heat the olive oil in a non-stick pan on a high heat and add the sliced onions. Reduce the heat to a medium setting and leave to brown for 5 minutes, moving around the pan to colour evenly.

  2. Add the carrots and cook for 8 minutes until softened.

  3. Add the garlic and cook for a further 1 minute.

  4. Add the turkey mince. Break down the mince with a spoon, moving it around the pan until evenly browned.

  5. Season with salt and pepper and add the cumin, paprika and chilli. Add the mushrooms and cook for a further 5 minutes.

  6. Add the tomatoes and lower the heat, leaving to simmer for 25 minutes while you prepare the peppers.

  7. Cut the peppers into half and scoop out the seeds. Put on a baking tray skin side up and bake for 15 minutes. 

  8. Remove the peppers from the oven and leave to cool slightly while waiting for the mince to finish simmering. Once the turkey mince has fully simmered for 25 minutes, turn the peppers over being careful not to burn your fingers and stuff with the filling.

  9. Crumble the feta cheese over the top and put back in the oven and cook for about 25 minutes until the feta cheese is browned 

  10. Serve with salad or sweet potato fries.
