About the Recipe

A comforting dinner for any night of the week and it's also a great dish to make ahead and freeze. Also great as a batch cook recipe for lunches especially during those winter months when you just want something delicious and warm but easy to reheat.

To make a vegan alternative, replace with a vegan Worcestershire sauce and remove the cheese topping.

Serve with green vegetables like peas, broccoli or cavolo nero.

Ingredients

  • 2 tbsps olive oil

  • 1 large onion, sliced

  • 1 clove of garlic, minced

  • 4 carrots, chopped very small

  • I celery stick, chopped very small

  • Butternut squash, chopped small

  • 1 courgette, cubed

  • 100g of mushrooms, chopped small

  • 500g cooked green lentils (you can use tinned)

  • 1 400g tinned tomatoes 

  • 1 tbsp Worcester sauce

  • 1 tsp of paprika

  • 1 tsp dried thyme

  • 1.5kg of sweet potato, peeled

  1. Add 1 tbsp of olive oil to a pan and turn on medium heat. Add the chopped onions and cook for a few minutes until soft. Add the garlic and cook for a minute. Add the chopped carrots and celery and cookf or 8 minutes.

  2. Add the remaining vegetables except the sweet potatoes, and cook for a further 10 minutes until tender.

  3. Add the tinned tomatoes, Worcester sauce, salt, pepper, paprika and thyme and simmer for 15 minutes. 

  4. Add the sweet potatoes to a pan of water and bring to the boil. Turn down the heat and simmer for 10-15 minutes, until soft but firm.

  5. Add your tinned lentils to the vegetable sauce and simmer for a further 10 minutes.

  6. When the sweet potatoes are cooked, drain and mash with a little salt and pepper to season. Put the lentils into a square pie dish and carefully cover with the sweet potato mash. For a slightly more luxurious pie, add some cheddar cheese to the top. Remember to add the calories though!
